First and most importantly, our chocolates start with single-origin chocolate. Chris Blue is the only confectioner in the United States to be allowed to use Amedei chocolate. Amedei is world-renown for using the best cocoa beans in the world to make the best chocolate in the world.

Our cream comes fresh from a family farm in Nebraska called Clover Cove. All the cows are grass-fed and free-grazing on acres of land that has not been touched by pesticides or fertilizers in 30 years. We call the farm, they milk the cows, and the next day we have the best organic cream for the chocolates adding the richness of each filling.

We use 5-Star organic butter from California. It is completely raw and has the highest butter fat content in the world; therefore, it is considered the best butter in the world! It actually takes 14 gallons of milk to make one pound of butter.

Our raspberries, figs, apricots, and other fresh fruit come directly from the local farmer’s market just two blocks from our shop. Everything is local and certified organic. All the seasonal fresh fruit contribute to the amazing flavors of each filling.

We went to great lengths to find the best nuts in the world. Our ennis hazelnuts come from an family-owned orchard in Washington. We get these sweet hazelnuts raw and roast them ourselves in order to make our own fresh hazelnut paste for the creamy center of the hazelnut chocolates. Macadamia, pistachio, almonds, and cashews come from California and are also raw when we receive them. We roast everything to make the best nut fillings.

As you can tell, we use absolutely no artificial flavorings, extracts, compounds, preservatives, or even purees. To most people’s surprise, all the coloring used on the chocolates are completely natural and are made from dehydrated fruits and vegetable skins.

Chris Blue, master chocolatier for Chocolatier Blue, spent his childhood summers on a self-sustaining family farm in Nebraska. It was on the farm that Chris learned about organic agriculture and about how important it is to support local farms.

After graduating from Chicago’s prestigious French Pastry School, Chris became chocolatier for the world-renowned Charlie Trotter’s restaurant. Charlie Trotter’s is celebrated for using the best and the freshest organic ingredients and Chris was pushed to create the best chocolates from the best ingredients.

Chris continues to be committed to creating perfectly balanced chocolates with simple flavors from the best ingredients. His techniques and approach to chocolates are the same as every great chef’s, that the best ingredients cooked perfectly, blended perfectly, and made fresh taste far better than anything else.

We have to mention that we have gone to great lengths to make everything green. All of our boxes and inserts are created from recycled materials and soy ink which makes them completely biodegradable and eco-friendly. Our shipping boxes and insulation are also made from recycled materials and are also biodegradable.
