Biography of Chris

Chef Chris Blue, owner of Chocolatier Blue, spent his childhood summers on a self-sustaining family farm in Nebraska. It was on the farm that Chris learned about organic agriculture and how important it is to support local farms. While working at Charlie Trotter’s in Chicago, Chris was able to combine his knowledge of organic agriculture with new, innovative cooking techniques never before used in chocolate confections.

Chris has the philosophy that chocolates should be treated like dessert with a perfect balance by using fresh pure ingredients. He would never be caught using any artificial flavors, extracts, compounds, preservatives, or pre-made purees in his confections. He uses only the best, freshest, most flavorful ingredients. He uses Amedei chocolate which is considered by many to be the best chocolate in the world. Raw butter is from the 5-Star Butter Co. in California, pistachios are from Sicily, and raw produce is from local markets. Chris has a high standard of quality and he makes every chocolate by hand to ensure the best flavor is achieved every time.

Chris attributes all the artistry of the chocolates to his fiancée, Jessica. Her goal is to have the appearance reflect the exquisite taste of each chocolate. Read more...
