We are drawn towards classical flavors and attempt to execute each perfectly using the freshest ingredients from the start. Each chocolate is treated like a dessert in a fine restaurant with a perfect balance of nuanced flavors to compliment the chocolate. Recently, while tasting chocolate bars, Chris was extremely impressed with an Italian company called Domori. In the past few years, Domori has established itself as the best chocolate in the world, with subtle complexity in each sensuous bite. After much deliberation and tasting, Chris has decided to switch to Domori for his confections.
Another powerful ingredient in the chocolates is the use of Five-Star organic butter from California. It has the highest butter fat content in the world; therefore, it is considered the best butter in the world! It actually takes 14 gallons of milk to make one pound of butter. Chris feels very fortunate to be one of the few chefs in the world able to incorporate such a product into his creations.
Depending on the season, the raspberries, peaches, lemons, pears, apples, and many other fruits used in our collections come directly from the local farmer’s markets in Berkeley.
Chris went to great lengths to find the best nuts in the world-pistachios from Sicily are hand-roasted for the perfect puree; Ennis hazelnuts from a small farm in Washington have proven to be the sweetest hazelnuts, perfect for chocolates.
Every chocolate has a pinch of fleur de sel salt from Camargue, France to best balance the sweet, sour, and bitter experience in each bite.
